  • 500g broccoli, roughly chopped
  • 50g ground almonds
  • 3 garlic cloves, crushed
  • 1 medium onion, chopped
  • 1 small carrot, chopped
  • 850ml vegetable stock

How To Make Broccoli Soup In Soup Maker:

  1. Sauté the onions and garlic (optional): If your soup maker has a sauté function, heat the olive oil and sauté the chopped onion and garlic for 5 minutes, stirring often. If not, sauté them in a saucepan, then transfer to the soup maker.
  2. Add the remaining ingredients: Add the broccoli, carrot, and vegetable stock to the soup maker (except the ground almonds). Stir to combine. Make sure not to exceed the MAX line, and top up with hot water if needed to reach the MIN line.
  3. Select the smooth setting: Put the lid on and choose the smooth soup setting. Let the soup maker cook and blend the ingredients.

Recipe Tips

  • For a thicker soup: You can add more broccoli or reduce the amount of stock for a thicker consistency.
  • Customize the flavor: Try adding a handful of spinach or kale for added nutrients, or sprinkle in some fresh herbs like parsley or basil for extra flavor.
  • Sauté option: If your soup maker doesn’t have a sauté function, simply sauté the onion and garlic in a pan first to bring out more flavor.

How To Store & Reheat Leftovers

Storing in the fridge: Let the soup cool completely before transferring it to an airtight container. Store in the fridge for up to 3 days.

Freezing: Once cooled, transfer the soup to freezer-safe containers and freeze for up to 3 months. Thaw in the fridge overnight before reheating.

Reheating: Warm the soup in a saucepan over medium heat, stirring occasionally, until heated through.
