Ingredients Needed:
- 6 tomatoes (on the vine or any type), chopped
- 2 red peppers, deseeded and chopped
- 1 clove garlic, crushed
- 1 onion, chopped
- 100g red lentils, rinsed (optional)
- 800ml vegetable stock
How To Make Red Pepper And Tomato Soup Maker:
- Sauté the onions and garlic: If your soup maker has a sauté function, heat a little olive oil and sauté the onions and garlic for about 5 minutes. If not, you can skip this step and add everything to the soup maker directly.
- Add all ingredients to the soup maker: Place the chopped tomatoes, peppers, garlic, onion, red lentils (if using), and vegetable stock into your soup maker. Stir everything together to make sure nothing sticks to the base.
- Select the smooth setting: Put the lid on and set your soup maker to the smooth soup setting. Let it cook and blend for around 21 minutes.
- Serve and enjoy: Once the soup is ready, pour it into bowls and serve hot. You can add a little chopped fresh chilli if you like a spicy twist.
Recipe Tips
- Tomato alternatives: You can use plum tomatoes or tinned tomatoes if you prefer. They all work well in this soup.
- Extra flavor: Add a pinch of dried chilli flakes or a fresh red chilli for a spicy kick.
- Thickening the soup: Red lentils are great for making the soup thicker, but you can also use potatoes if you prefer.
How To Store & Reheat Leftovers
Fridge: After the soup cools, transfer it to a sealed container and keep it in the fridge for up to 3 days.
Freezer: Let the soup cool completely, then freeze it in airtight containers for up to 3 months. Defrost overnight in the fridge before reheating.
Reheat: Warm the soup on the stovetop over medium heat, stirring occasionally until it’s hot.
