- 1 medium onion, chopped
- 2 cloves garlic, crushed
- 1 medium potato (175g), chopped
- 1 tsp dried mixed herbs
- 1 vegetable stock pot or cube
- Salt and pepper to taste

- Prepare the ingredients: Wash the courgettes, and chop them into chunks. Peel and chop the onion, crush the garlic, and chop the potato into small pieces.
- Add to soup maker: Place the courgettes, onion, garlic, potato, and herbs into the soup maker. Add the stock pot or cube, and pour hot water up to the MAX line.
