Ingredients Needed:

  • 500g courgettes, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, crushed
  • 1 medium potato (175g), chopped
  • 1 tsp dried mixed herbs
  • 1 vegetable stock pot or cube
  • Salt and pepper to taste
  • Optional: 100ml cream for serving

How To Make Courgette Soup​ In Soup Maker:

  • Prepare the ingredients: Wash the courgettes, and chop them into chunks. Peel and chop the onion, crush the garlic, and chop the potato into small pieces.
  • Add to soup maker: Place the courgettes, onion, garlic, potato, and herbs into the soup maker. Add the stock pot or cube, and pour hot water up to the MAX line.
  • Cook: Set the soup maker to the ‘Smooth Soup’ setting. The soup will cook and blend in about 30 minutes.
  • Serve: Once the soup is ready, taste and adjust seasoning if needed. Optionally, stir in some cream or grated cheese for extra flavor.
